Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup low-fat milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy, then remove and chop.
  3. Add onions and garlic to the pot, sauté until soft.
  4. Stir in broccoli and vegetable broth, bring to a boil.
  5. Reduce heat and simmer until broccoli is tender.
  6. Blend the soup until smooth, then return to pot.
  7. Stir in milk and cheese, heat until melted.
  8. Season with salt and pepper.
  9. Top with chopped turkey bacon before serving.
