Ingredients

  • 8 ounces fettuccine
  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes
  • 2 cups fresh spinach
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add shrimp and garlic, cooking until shrimp is pink, about 3-4 minutes.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in Parmesan cheese and red pepper flakes; mix well.
  6. Add spinach and cooked fettuccine; combine until heated through.
  7. Season with salt and black pepper to taste.
  8. Serve garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
