A warm and comforting creamy tomato soup made with turkey bacon for a delightful winter meal.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add olive oil to the pot and sauté onions until translucent, then add garlic and cook for another minute.
  3. Stir in crushed tomatoes, chicken broth, basil, and oregano. Bring to a simmer.
  4. Blend the soup for a smoother texture if desired, then stir in the heavy cream.
  5. Season with salt and pepper. Serve garnished with crumbled turkey bacon.
