Mujadara is a hearty dish made with lentils and rice, topped with caramelized onions, offering a perfect blend of flavors and textures.

Ingredients

  • 1 cup green or brown lentils
  • 1 cup long-grain rice
  • 4 cups water or vegetable broth
  • 2 large onions, thinly sliced
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse the lentils and rice separately under cold water.
  2. In a pot, combine lentils and water or broth and bring to a boil. Reduce heat and simmer until lentils are tender, about 15-20 minutes.
  3. While the lentils are cooking, heat olive oil in a skillet and add sliced onions. Cook until caramelized, about 15-20 minutes.
  4. Add the rice, cumin, salt, and pepper to the pot with lentils, then stir in the caramelized onions.
  5. Cover and simmer until the rice is cooked, about 18-20 minutes.

Notes

  • For added flavor, you can sauté garlic with the onions.
  • Serving with yogurt or a green salad pairs nicely.
