A deliciously creamy, no-bake cheesecake with a cinnamon sugar crust, perfect for a keto diet.

Ingredients

  • 8 ounces cream cheese
  • 1/2 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup almond flour
  • 2 tablespoons cinnamon
  • 1/4 cup granulated erythritol
  • 1/4 cup butter, melted

Instructions

  1. In a bowl, mix cream cheese, powdered erythritol, and vanilla until smooth.
  2. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  3. Combine almond flour, cinnamon, granulated erythritol, and melted butter to form the crust, then press it into the bottom of a pan.
  4. Spread the cheesecake mixture over the crust and chill for at least 4 hours.
  5. Slice into bars and sprinkle with additional cinnamon before serving.

Notes

  • For a stronger cinnamon flavor, add an extra teaspoon to the cheesecake mix.
  • Let the cheesecake bars sit at room temperature for 10 minutes before serving for easier slicing.
