  • 1 pound turkey bacon
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion, celery, carrots, and garlic to the pot and sauté until the vegetables are tender.
  3. Stir in diced tomatoes, kidney beans, cannellini beans, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add the pasta and cook until tender, about 10 minutes.
  6. Return the crispy turkey bacon to the pot and stir well before serving.

Notes

  • For an extra kick, add red pepper flakes to taste.
