4 pieces chicken thighs
2 cups long-grain rice
1 cup coconut milk
1 cup chicken broth
2 tablespoons jerk seasoning
1 onion diced
2 cloves garlic minced
1 bell pepper chopped
1 bunch green onions chopped
1 tablespoon olive oil
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and bell pepper, sauté until softened.
Stir in jerk seasoning and cook for 1 minute.
Add chicken thighs and brown on both sides.
Pour in coconut milk and chicken broth, bring to a boil.
Add rice, reduce heat, cover, and simmer for 20 minutes.
Remove from heat and let sit for 5 minutes, then fluff rice with a fork.
Garnish with green onions and serve.
Notes
For extra flavor, marinate chicken in jerk seasoning for a few hours before cooking.
Adjust the spice level by using more or less jerk seasoning.
