  • 4 pieces chicken thighs
  • 2 cups long-grain rice
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tablespoons jerk seasoning
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 bunch green onions chopped
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper, sauté until softened.
  3. Stir in jerk seasoning and cook for 1 minute.
  4. Add chicken thighs and brown on both sides.
  5. Pour in coconut milk and chicken broth, bring to a boil.
  6. Add rice, reduce heat, cover, and simmer for 20 minutes.
  7. Remove from heat and let sit for 5 minutes, then fluff rice with a fork.
  8. Garnish with green onions and serve.

Notes

  • For extra flavor, marinate chicken in jerk seasoning for a few hours before cooking.
