One Pot Greek Chicken and Lemon Rice

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • ½ cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken thighs with salt, pepper, and oregano.
  2. Place chicken in the pot and brown on both sides, about 5-7 minutes. Remove from pot and set aside.
  3. Add chopped onion and garlic to the pot, sauté until softened.
  4. Stir in rice and cook for another minute.
  5. Add chicken broth, lemon juice, and zest. Bring to a boil.
  6. Return chicken to the pot, cover, and reduce heat to low. Simmer for 25-30 minutes until chicken is cooked through and rice is tender.
  7. Sprinkle chopped parsley on top before serving.

Notes

  • For extra flavor, marinate the chicken in lemon juice and herbs a few hours before cooking.
