This one pot shawarma chicken and rice recipe is the perfect combination of spices, juicy chicken, and fluffy rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 2 teaspoons shawarma spice mix
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced chicken thighs and cook until browned.
  3. Stir in onion and garlic, and cook until softened.
  4. Add rice and mix to coat in the oil.
  5. Pour in chicken broth and add shawarma spice mix, salt, and pepper.
  6. Bring to a simmer, then reduce heat and cover. Cook for 20 minutes.
  7. Stir in bell pepper and cook for an additional 5 minutes.
  8. Remove from heat and let sit covered for 5 minutes.
  9. Fluff with a fork, garnish with parsley, and serve.

Notes

  • For extra flavor, add some lemon juice before serving.
  • Use chicken breast for a leaner option.
