A comforting and delicious one-pot lasagna soup that’s easy to make and perfect for any night of the week.

Ingredients

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 12 ounces lasagna noodles, broken
  • 2 cups mozzarella cheese, shredded
  • 1 cup ricotta cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef and sausage over medium heat.
  2. Add the chopped onion and garlic; cook until softened.
  3. Stir in the crushed tomatoes, beef broth, and Italian seasoning.
  4. Bring the mixture to a boil, then add the broken lasagna noodles.
  5. Cook until the noodles are tender, about 15 minutes.
  6. Remove from heat and stir in the mozzarella and ricotta cheese.
  7. Season with salt and pepper to taste.
