  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 medium ripe peaches, sliced
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. In a well-greased muffin tin, place peach slices on the bottom and sprinkle with brown sugar.
  6. Pour batter over the peaches, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool before flipping the cakes onto a serving plate.
