A bright and fresh Rainbow Orzo Salad perfect for any gathering or meal.

Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, olives, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.

Notes

  • For a vegetarian version, omit the feta cheese.
  • This salad can be made a day in advance for flavors to meld.
