- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cook the orzo pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, olives, and parsley.
