A warm and comforting roasted tomato soup enriched with turkey bacon for a delicious twist on a classic recipe.

  • 2 pounds tomatoes
  • 1 cup turkey bacon
  • 1 large onion
  • 4 cloves garlic
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes in half and place them cut side up on a baking sheet.
  3. Dice the turkey bacon and sprinkle it over the tomatoes.
  4. Roast the tomatoes and bacon in the oven for about 30 minutes until the tomatoes are soft.
  5. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until the onion is translucent.
  6. Add the roasted tomatoes and turkey bacon to the pot along with chicken broth, basil, salt, and pepper.
  7. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  8. Using an immersion blender, puree the soup until smooth.
  9. Stir in heavy cream and heat gently before serving.

Notes

  • For a dairy-free version, omit the heavy cream or use coconut milk.
  • Customize with your choice of herbs for additional flavor.
