  • 1 cup orzo pasta
  • 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt to taste
  • Freshly ground pepper to taste
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  4. While the vegetables roast, cook the orzo pasta according to package instructions; drain.
