A delicious and simple recipe for salmon served with lemon-herb orzo and broccoli, perfect for a quick weeknight meal.

  • 2 fillets salmon
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet and drizzle with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Bake for 12-15 minutes until salmon is cooked through.
  4. Meanwhile, cook orzo pasta according to package instructions, adding broccoli in the last 3 minutes of cooking.
  5. Drain and toss with lemon zest, olive oil, and additional salt and pepper if needed.
  6. Serve salmon on top of the orzo and broccoli mixture.

Notes

  • For added flavor, consider marinating the salmon for 30 minutes before baking.
