  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups fresh spinach
  • 1 package (9 ounces) cheese tortellini
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned.
  3. Stir in onion, carrots, and celery; cook until tender.
  4. Add garlic and sauté for 1 minute.
  5. Pour in chicken broth and diced tomatoes; bring to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Add spinach and tortellini; cook until tortellini is tender.
  8. Season with Italian seasoning, salt, and pepper before serving.
