  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 package (9 ounces) fresh cheese tortellini
  • 2 cups fresh spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
  2. Add the chopped onion and garlic, sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes. Add oregano and basil, stir to combine.
  4. Bring the soup to a boil, then reduce to a simmer.
  5. Add the tortellini and cook according to package instructions.
  6. Stir in the fresh spinach until wilted.
  7. Season with salt and black pepper to taste before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add other vegetables like carrots or bell peppers for extra flavor.
