Ingredients

  • 4 cups chicken broth
  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 can diced tomatoes (14.5 oz)

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. Add diced onions, carrots, celery, and garlic to the pot. Sauté until soft.
  3. Stir in the chicken broth, oregano, basil, black pepper, and salt.
  4. Add the chicken breast and diced tomatoes. Bring to a boil.
  5. Reduce heat and let simmer until chicken is cooked through.
  6. Shred the chicken and return to the pot. Crumble the cooked turkey bacon on top before serving.

Notes

  • This soup can be served with crusty bread.
