A delicious Slow Cooker Chicken Enchilada Casserole that is easy to prepare and a family favorite!

Ingredients

  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups tortilla chips
  • 1 cup shredded cheese
  • 1 onion, diced
  • 1 tablespoon taco seasoning

Instructions

  1. In a slow cooker, layer the shredded chicken, enchilada sauce, black beans, corn, tortilla chips, onion, and taco seasoning.
  2. Stir to combine all ingredients.
  3. Cook on low for 4-6 hours or until heated through.
  4. Top with cheese and cover until melted.
