  • 4 boneless, skinless chicken thighs
  • 1 cup carrots, chopped
  • 1 cup bell peppers, sliced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Combine honey, soy sauce, garlic, ginger, and sesame oil in a bowl.
  2. Place chicken and chopped veggies in the slow cooker.
  3. Pour the honey mixture over the chicken and veggies.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. In the last 30 minutes, mix cornstarch with water and stir into the slow cooker to thicken sauce.
  6. Serve hot and enjoy!
