A hearty and delicious slow cooker minestrone soup featuring turkey bacon and chicken ham.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 can cannellini beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 cup pasta, small shapes
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add turkey bacon and chicken ham.
  2. Add the diced vegetables and minced garlic.
  3. Pour in the vegetable broth and stir in the beans and tomatoes.
  4. Season with oregano, basil, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 30 minutes, add pasta and cook until tender.
  7. Serve warm.

Notes

  • For added flavor, sauté the turkey bacon before adding it to the slow cooker.
  • Feel free to add other vegetables according to your preference.
