- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 can cannellini beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 cup pasta, small shapes
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- In a slow cooker, add turkey bacon and chicken ham.
- Add the diced vegetables and minced garlic.
- Pour in the vegetable broth and stir in the beans and tomatoes.
- Season with oregano, basil, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add pasta and cook until tender.
- Serve warm.
Notes
- For added flavor, sauté the turkey bacon before adding it to the slow cooker.
- Feel free to add other vegetables according to your preference.
