  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon black pepper
  • 8 ounces rice noodles
  • 3 green onions, sliced
  • 1 cup broccoli florets

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Season the beef chuck roast with black pepper and sear it on all sides.
  3. Transfer the beef to a slow cooker and add the beef broth, soy sauce, brown sugar, garlic, and ginger.
  4. Cook on low for 6-8 hours, or until the beef is tender.
  5. About 30 minutes before serving, add the broccoli and rice noodles to the slow cooker.
  6. Once the noodles are cooked, shred the beef and mix everything together before serving.
  7. Garnish with sliced green onions.

Notes

  • For added flavor, marinate the beef overnight.
  • Serve with extra soy sauce if desired.
