- 2 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 4 cups beef broth
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon black pepper
- 8 ounces rice noodles
- 3 green onions, sliced
- 1 cup broccoli florets
- Heat the vegetable oil in a large skillet over medium-high heat.
- Season the beef chuck roast with black pepper and sear it on all sides.
- Transfer the beef to a slow cooker and add the beef broth, soy sauce, brown sugar, garlic, and ginger.
- Cook on low for 6-8 hours, or until the beef is tender.
