1 pound boneless, skinless chicken breasts
4 cups chicken broth
1 cup cream cheese
2 cups jalapeños, diced
1 onion, chopped
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/4 cup cilantro, chopped (for garnish)
Instructions
In a large pot, combine the chicken breasts and chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through.
Remove the chicken, shred it, and set aside.
Add the diced jalapeños, onion, and garlic to the pot, and cook until softened.
Stir in the cream cheese until melted, then add the shredded chicken back to the pot.
Add spices: smoked paprika, cumin, salt, and black pepper. Stir well to combine.
Top with shredded cheddar cheese and let it melt before serving.
Garnish with chopped cilantro and serve hot.
