  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium bell peppers, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup rice, uncooked
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, brown the ground beef with onions and garlic over medium heat until cooked through.
  2. Add the diced bell peppers and cook for an additional 5 minutes.
  3. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes.
  5. Add the uncooked rice and allow to cook for another 15-20 minutes until the rice is tender.
  6. If desired, stir in shredded cheese before serving.
