A delicious and easy taco casserole recipe that the whole family will enjoy.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 8 tortillas, cut into strips
  • 2 cups shredded cheese
  • 1 diced onion
  • 1 bell pepper, diced
  • 1 cup salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook ground beef with onion and bell pepper until browned.
  3. Add black beans, corn, salsa, and taco seasoning; stir to combine.
  4. Layer half of the tortilla strips in a baking dish.
  5. Top with half of the beef mixture and half of the cheese.
  6. Repeat layers, finishing with cheese on top.
  7. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • Serve with sour cream and jalapeños for extra flavor.
