- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 8 tortillas, cut into strips
- 2 cups shredded cheese
- 1 diced onion
- 1 bell pepper, diced
- 1 cup salsa
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground beef with onion and bell pepper until browned.
- Add black beans, corn, salsa, and taco seasoning; stir to combine.
- Layer half of the tortilla strips in a baking dish.
- Top with half of the beef mixture and half of the cheese.
- Repeat layers, finishing with cheese on top.
- Bake for 25-30 minutes until cheese is bubbly.
