Ingredients

Scale
  • 3 lbs chicken pieces
  • 2 cups buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • vegetable oil for frying

Instructions

  1. In a large bowl, combine the buttermilk with paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  2. Add the chicken pieces to the marinade and refrigerate for at least 4 hours, preferably overnight.
  3. In a shallow dish, place the flour.
  4. Remove the chicken from the marinade and shake off excess liquid, then dredge each piece in flour, coating thoroughly.
  5. In a large skillet, heat oil over medium-high heat until hot.
  6. Fry the chicken pieces in batches until golden brown and cooked through, about 15-18 minutes per side.
  7. Transfer cooked chicken to a paper towel-lined plate to drain excess oil.

Notes

  • For extra crispy chicken, double-dredge the pieces in flour.
  • Let chicken rest for a few minutes before serving to ensure juiciness.
