2 large eggs
1 teaspoon vanilla extract
2 cups old-fashioned oats
2 cups all-purpose flour
1 teaspoon baking soda

2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract for icing
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
Add the eggs and vanilla extract, mixing well.
In another bowl, combine oats, flour, baking soda, cinnamon, and salt. Gradually add to the butter mixture, stirring until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are golden but the centers are still chewy.
Allow the cookies to cool completely before icing.
For the icing, whisk together powdered sugar, milk, and vanilla extract until smooth. Spread over cooled cookies.
