A comforting and easy soup made with tortellini, turkey bacon, and chicken ham, perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 package (9 ounces) tortellini, fresh or frozen
  • 1 cup chicken ham, diced
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion, carrots, and celery; sauté until the vegetables are tender.
  3. Stir in the garlic and cook for another minute.
  4. Add the chicken broth, diced tomatoes, oregano, and basil; bring to a boil.
  5. Stir in the tortellini and chicken ham; cook until the tortellini is tender.
  6. Add the spinach and cook just until wilted.
  7. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made ahead and refrigerated for up to 3 days.
  • Add more vegetables like zucchini or kale for extra nutrition.
