Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup green beans, trimmed
  • 2 cups potatoes, diced
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5 minutes.
  2. Add the garlic and continue to sauté for another minute.
  3. Add the beef cubes and brown on all sides.
  4. Pour in the beef broth and add the diced tomatoes, thyme, and bay leaves. Bring to a boil.
  5. Reduce heat and simmer for 1.5 hours until the beef is tender.
  6. Add the green beans, potatoes, and corn. Continue to simmer for another 30 minutes.
  7. Season with salt and pepper to taste. Remove bay leaves before serving.

Notes

  • For extra flavor, you can add a splash of Worcestershire sauce.
  • This soup can be made ahead and tastes even better the next day.
