A warm and hearty vegetable soup with the savory addition of turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 cups mixed vegetables (such as peas and corn)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add olive oil to the pot, followed by onion, carrots, and celery. Sauté until softened.
  3. Stir in garlic, and cook for an additional minute.
  4. Add diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
  5. Reduce heat and add the mixed vegetables, cooking for 10-15 minutes.
  6. Return the turkey bacon to the pot. Season with salt and pepper before serving.

Notes

  • This soup can be made a day in advance and tastes even better the next day.
  • Feel free to add other vegetables like spinach or zucchini.
