1 pound boneless chicken thighs
2 tablespoons shawarma spice blend
1 tablespoon olive oil
1 onion, sliced
4 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon black pepper
4 pita breads
1 cup lettuce, shredded
½ cup tomato, diced
½ cup cucumber, sliced
½ cup tahini sauce
Instructions
In a bowl, combine the olive oil, shawarma spice blend, garlic, lemon juice, salt, and pepper. Coat the chicken thighs with this mixture.
Place the sliced onion at the bottom of the slow cooker, then lay the marinated chicken on top.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
Once cooked, shred the chicken using forks and mix it with the onions and juices from the slow cooker.
Serve the chicken in warmed pita breads, topped with lettuce, tomatoes, cucumbers, and drizzled with tahini sauce.
Notes
For an extra kick, add sliced jalapeños to your pita.
