- 1 pound boneless, skinless chicken breasts
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup corn, frozen or canned
- 1/4 cup cilantro, chopped
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onion and garlic, and sauté until soft.
- Add the chicken, white beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through.
- Shred the chicken and return it to the pot.
- Stir in corn and cilantro and cook for an additional 5 minutes.
- Serve hot, topped with crispy turkey bacon.
Notes
- For a creamier chili, add a splash of heavy cream or sour cream before serving.
- This dish can be made in a slow cooker for an even richer flavor.
