Enjoy a hearty bowl of white chicken chili that combines tender chicken with the smoky flavor of turkey bacon.

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup corn, frozen or canned
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, and sauté until soft.
  3. Add the chicken, white beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through.
  5. Shred the chicken and return it to the pot.
  6. Stir in corn and cilantro and cook for an additional 5 minutes.
  7. Serve hot, topped with crispy turkey bacon.

Notes

  • For a creamier chili, add a splash of heavy cream or sour cream before serving.
  • This dish can be made in a slow cooker for an even richer flavor.
