A comforting bowl of Zuppa Toscana made with turkey bacon for a deliciously healthy twist.

Ingredients

  • 4 slices turkey bacon
  • 1 pound Italian sausage
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble.
  2. Add Italian sausage to the pot and cook until browned.
  3. Stir in onion and garlic, cooking until softened.
  4. Add chicken broth and potatoes, bringing to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Add kale, cream, and red pepper flakes, cooking until kale is wilted.
  7. Season with salt and pepper, garnish with crumbled bacon before serving.

Notes

  • For a spicier version, add more red pepper flakes.
  • Use low-fat cream for a lighter option.
