  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix flour, baking soda, salt, and ground cinnamon.
  3. In another bowl, cream together butter and granulated sugar. Add eggs and vanilla extract, mixing until smooth.
  4. Gradually incorporate the dry ingredients, then fold in the diced apples.
  5. In a small bowl, combine brown sugar and ground cinnamon for the swirl.
  6. Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon-sugar mixture, then add the remaining batter and top with the rest of the sugar mixture.
  7. Bake for 60-70 minutes or until a toothpick comes out clean from the center.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
