A rich and spicy Cajun Seafood Gumbo that combines diverse seafood and vegetables for a deliciously hearty meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound crab meat
  • 1/2 pound andouille sausage, sliced
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 tablespoons Cajun seasoning
  • 2 bay leaves
  • Salt to taste
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 2 cups okra, sliced
  • Green onions for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Whisk in the flour to create a roux, cooking until it’s a deep brown color.
  2. Add onion, bell pepper, celery, and garlic. Sauté until softened.
  3. Stir in the Cajun seasoning and cook for another minute.
  4. Add the chicken broth, and diced tomatoes, and bring to a simmer.
  5. Mix in the sausage, okra, and bay leaves. Simmer for about 15 minutes.
  6. Finally, add the shrimp and crab meat. Cook until the shrimp are pink and opaque, about 5 minutes.
  7. Season with salt. Remove bay leaves before serving.

Notes

  • For extra heat, add cayenne pepper to taste.
  • This recipe can be made ahead and reheated for flavor enhancement.
