- 1 pound shrimp, peeled and deveined
- 1 pound crab meat
- 1/2 pound andouille sausage, sliced
- 1 large onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 tablespoons Cajun seasoning
- 2 bay leaves
- Salt to taste
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 2 cups okra, sliced
- Green onions for garnish
- In a large pot, heat the vegetable oil over medium heat. Whisk in the flour to create a roux, cooking until it’s a deep brown color.
- Add onion, bell pepper, celery, and garlic. Sauté until softened.
- Stir in the Cajun seasoning and cook for another minute.
- Add the chicken broth, and diced tomatoes, and bring to a simmer.
- Mix in the sausage, okra, and bay leaves. Simmer for about 15 minutes.
- Finally, add the shrimp and crab meat. Cook until the shrimp are pink and opaque, about 5 minutes.
- Season with salt. Remove bay leaves before serving.
Notes
- For extra heat, add cayenne pepper to taste.
- This recipe can be made ahead and reheated for flavor enhancement.
