A warm and comforting chicken and rice soup recipe that’s perfect for chilly nights.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  1. In a large pot, sauté onions, carrots, and celery until soft.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add the rice and thyme, and simmer until the rice is tender.
  5. Stir in the shredded chicken, and season with salt and pepper.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
  • Feel free to use leftover rotisserie chicken for convenience.
