  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 4 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups heavy cream

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add chicken breasts and cook until no longer pink.
  4. Stir in potatoes, carrots, chicken broth, thyme, rosemary, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in heavy cream and let it heat through.
