  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, combine softened butter, eggs, milk, and vanilla extract until well blended.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. In a separate bowl, mix brown sugar, walnuts (if using), and cinnamon for the streusel topping.
  6. Fill muffin cups halfway with batter, add a layer of the streusel mixture, and then top with more batter.
  7. Sprinkle remaining streusel on top of the muffins.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow muffins to cool slightly before serving.
