1 cup wild rice
2 cups chicken broth
1 pound chicken breast, diced
1 cup mushrooms, sliced
1/2 cup onion, chopped
2 cloves garlic, minced
1 cup heavy cream
4 slices turkey bacon, cooked and crumbled
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large pot, combine chicken broth and wild rice. Bring to a boil, then reduce heat to low and cover. Cook for 45 minutes.
In a separate pan, sauté onions and garlic until translucent. Add mushrooms and cook until soft.
Add diced chicken to the pot and cook until no longer pink.
Stir in heavy cream, thyme, salt, and pepper. Simmer for 10 minutes.
Mix in turkey bacon just before serving.
