  • 1 pound chicken breast, cooked and shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small corn tortillas
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shredded chicken with garlic powder, taco seasoning, salt, and pepper.
  3. Warm tortillas in a skillet until pliable.
  4. Fill each tortilla with the chicken mixture and top with cheese.
  5. Fold tortillas in half and place on a baking sheet.
  6. Bake for 15 minutes or until cheese is melted and tortillas are crispy.
  7. In a small bowl, combine diced avocado, cilantro, lime juice, and a pinch of salt to make the avocado cilantro sauce.
  8. Serve the tacos hot with the avocado cilantro sauce drizzled on top.
