A cozy and flavorful potato soup enriched with cheddar cheese, garlic, and herbs that is perfect for chilly evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add the diced potatoes, vegetable broth, thyme, and rosemary. Bring to a boil.
  3. Reduce heat, cover, and simmer until potatoes are tender.
  4. Use an immersion blender to partially blend the soup for a creamy texture, or transfer to a blender in batches.
  5. Stir in the heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a lighter version, substitute heavy cream with milk.
  • Add crispy bacon bits for extra flavor if desired.
