A delicious and easy recipe for family-favorite cheesy ground beef enchiladas.

  • 1 pound ground beef
  • 1 can (15 ounces) refried beans
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the refried beans, salsa, cumin, and garlic powder to the beef. Stir to combine and cook until heated through.
  4. In another skillet, warm the tortillas to make them pliable.
  5. Spoon some of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up. Place in a baking dish.
  6. Pour any remaining salsa over the top and sprinkle with additional cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.

Notes

  • Feel free to add chopped onions or peppers to the beef mixture for extra flavor.
  • For a spicier version, add jalapeños or use hot salsa.
