- 1 pound ground beef
- 1 cup diced onion
- 2 cups enchilada sauce
- 2 cups shredded cheese
- 10 corn tortillas
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef and onion over medium heat until the meat is cooked through.
- Stir in the garlic powder, cumin, and salt.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with a portion of the beef mixture and some cheese, then roll and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, you can add black beans or corn to the filling.
- Top with sour cream and fresh cilantro before serving.
