Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cups enchilada sauce
  • 2 cups shredded cheese
  • 10 corn tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onion over medium heat until the meat is cooked through.
  3. Stir in the garlic powder, cumin, and salt.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with a portion of the beef mixture and some cheese, then roll and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, you can add black beans or corn to the filling.
  • Top with sour cream and fresh cilantro before serving.
