A delightful Fraisier Cake paired with luxurious diplomat cream, perfect for any sweet occasion.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 2 tablespoons gelatin
  • 1/2 cup water
  • 1 pound fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour and salt. Gradually add this to the butter mixture, alternating with milk, mixing until smooth.
  5. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While the cake cools, prepare the diplomat cream by whipping the heavy cream with powdered sugar until soft peaks form.
  7. Dissolve the gelatin in warm water and fold it into the whipped cream.
  8. Once the cake has cooled, slice it in half horizontally and spread a layer of diplomat cream on the bottom half.
  9. Layer fresh strawberries on top of the cream, then replace the top half of the cake.
  10. Frost the cake with remaining diplomat cream and garnish with more strawberries.
