- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup milk
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 2 tablespoons gelatin
- 1/2 cup water
- 1 pound fresh strawberries
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, combine the flour and salt. Gradually add this to the butter mixture, alternating with milk, mixing until smooth.
- Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the diplomat cream by whipping the heavy cream with powdered sugar until soft peaks form.
- Dissolve the gelatin in warm water and fold it into the whipped cream.
- Once the cake has cooled, slice it in half horizontally and spread a layer of diplomat cream on the bottom half.
- Layer fresh strawberries on top of the cream, then replace the top half of the cake.
- Frost the cake with remaining diplomat cream and garnish with more strawberries.
