A hearty and comforting Greek lemon chicken soup that warms you from the inside out.

Ingredients

  • 1 pound chicken thighs
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 large lemons, juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and onion; sauté until translucent.
  2. Add chicken thighs, broth, carrots, and celery. Bring to a boil, then reduce heat and simmer for 25 minutes.
  3. Remove chicken, shred it, and return it to the pot. Stir in orzo and cook until tender.
  4. Mix in lemon juice, oregano, salt, and pepper. Serve hot, garnished with parsley.

Notes

  • Add more lemon juice if you prefer a tangier flavor.
  • This soup can be made ahead of time and stored for up to 3 days in the refrigerator.
