- 1 pound chicken thighs
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 large lemons, juiced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
- In a large pot, heat olive oil over medium heat. Add garlic and onion; sauté until translucent.
- Add chicken thighs, broth, carrots, and celery. Bring to a boil, then reduce heat and simmer for 25 minutes.
- Remove chicken, shred it, and return it to the pot. Stir in orzo and cook until tender.
- Mix in lemon juice, oregano, salt, and pepper. Serve hot, garnished with parsley.
