Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound boneless chicken thighs
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1/2 cup orzo pasta
  • 2 large lemons, juiced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add chicken broth and bring to a boil.
  3. Add chicken thighs, carrots, and celery. Cook until chicken is cooked through.
  4. Remove chicken, shred, and return to pot.
  5. Add orzo and cook until al dente.
  6. Stir in lemon juice and dill. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra dill if desired.
