A delicious and healthy grilled shrimp bowl featuring fresh avocado, zesty corn salsa, and a creamy garlic sauce.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, fresh or frozen
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shrimp, lime juice, olive oil, garlic, chili powder, salt, and pepper. Marinate for 15 minutes.
  2. Grill shrimp over medium heat for 2-3 minutes per side until cooked through.
  3. In a separate bowl, mix together avocado and corn.
  4. For the creamy garlic sauce, blend mayonnaise and sour cream with remaining minced garlic.
  5. Serve the grilled shrimp over the avocado and corn mixture, drizzled with the creamy garlic sauce.

Notes

  • Adjust the spiciness by adding more or less chili powder.
  • Can substitute shrimp with grilled chicken for variation.
