  • 3 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the bananas.
  3. Add the crushed pineapple, shredded coconut, and chopped macadamia nuts, mixing well.
  4. In another bowl, cream together the softened butter and brown sugar.
  5. Add the eggs and vanilla extract to the butter mixture and mix until combined.
  6. Combine the dry ingredients (flour, baking soda, salt) and gradually add to the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas.
  • It’s delicious served warm with butter.
