Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 6 slices turkey bacon, chopped
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add the onions and garlic to the drippings, sautéing until translucent.
  3. Stir in the diced potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use a potato masher to slightly mash some of the potatoes for a creamy texture.
  6. Stir in the heavy cream and cheese until melted and combined. Add the cooked bacon back into the pot.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • For a healthier version, you can substitute turkey bacon with smoked paprika for flavor.
  • Check seasoning before serving; you may want to adjust salt and pepper to taste.
