- 12 ounces ziti pasta
- 2 tablespoons olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 zucchini diced
- 1 bell pepper diced
- 2 cups spinach
- 24 ounces marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and cook for another minute.
- Stir in zucchini and bell pepper, cooking until slightly softened.
- Add in spinach and cook until wilted.
- Mix in marinara sauce, ricotta cheese, and half of the mozzarella cheese. Stir until well combined.
- Combine the cooked pasta with the vegetable mixture and season with oregano, salt, and black pepper.
- Transfer the mixture to a baking dish. Top with remaining mozzarella and Parmesan cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
